Vegetable Pancake

2 Grated Zucchini

2 Carrots peeled and grated

2 Large Potatoes peeled and grated (squeezed to get excess water out)

4 Spring Onions finely chopped

1 Red Capsicum finely chopped

2 cups Plain flour

2 beaten eggs

1 cup water

Salt and Pepper to taste

Olive oil for frying

Sesame Oil for finishing

 

Place all vegetables in a large bowl. Sift flour into vegetables until well distributed. Add eggs and half water. If batter is stiff add remaining water. Add salt & Pepper

Heat olive oil in pan and place batter in pan (pancake size according to preference). Pat down and fry until golden and crispy. About 5 minutes each side. Towards end drizzle small amount of Sesame oil on top.
