Tuna Patties

Ingredients

6 spring onions finely sliced

Juice of 1 lemon

1 1/2 teaspoon salt

800g tuna shredded

1 1/2 kg potatoes

1 cup cooked peas

3 eggs beaten with 1 Tablespoon water

flour

Panko breadcrumbs

1 teaspoon Black Pepper

1/2 cup Milk

20gm Butter

1/2 kg Pumpkin

Mash cooked potatoes and pumpkin with milk and butter. Add tuna, spring onions, peas, lemon juice, salt and pepper. Mix well and allow to cool.

Form small patties roll in flour then beaten eggs then breadcrumbs. Fry in oil on moderate gas for 3-4 minutes each side. Makes about 40.
