Potato Fritters

Ingredients

2 onions finely sliced into rings

3 eggs beaten

2 tablespoons corn flour

1 teaspoon salt

2 tablespoons finely chopped Parsley

4 large potatoes (about 1kg)

Method

Grate potatoes and squeeze out excess moisture. Mix all ingredients in bowl. Heat 2 tablespoons oil and one tablespoon Ghee or thereabouts in frying pan on moderate heat. Place one tablespoon of mixture in pan and pat flat add more until pan filled. Cook for 5 minutes each side.
