Lamingtons

Ingredients

125gm butter

1 cup sugar

2 eggs

2 cups self raising flour

¾ cup milk& water

1tsp teaspoon vanilla essence

Pinch of salt

Beat butter and sugar to a light cream. Add eggs one at a time and beat well. Add salt, sift flour and add alternately with the milk. Flavour with vanilla essence. Put a teaspoon of mixture in patty pans. Cook in hot oven – 200C

Icing

3 cups of sugar

2 tablespoons cocoa

1 cup water

1 teaspoon vanilla

Desiccated coconut

Put sugar, water and cocoa into a large saucepan and bring to boil, stirring occasionally. When boiling take off from heat and wipe down side of saucepan with wet pastry brush. Boil for 10 minutes. Add vanilla and stir well for one minute. Quickly dip each cake in the mixture and roll in coconut.
