Curried Sausages

Ingredients

1 ½ Kilo Thin Sausages

2 Onion roughly chopped

3 Carrots Diced

3 Stalks Celery chopped

1 Teaspoon black pepper

1 Teaspoon Salt

1 x 440gm Tin Tomatoes mashed

1 Teaspoon minced Ginger

4 large cloves finely chopped or crushed

4 Heaped Tablespoon Curry Powder

3 Tablespoons Sweet Mango Chutney

1 Cup Green Peas

1 cup water

Place sausages in pot of cold water and bring to the boil. As soon as starting to boil take off stove and rinse in cold water then cut into halfs.

Place Ghee, butter or oil in large pot. Place on low heat and fry onions for 5 minutes stirring occasionally. Add the Garlic and Ginger. Fry for another 5 minutes or so stirring occasionally.

Add the Curry Powder, salt and pepper. Stir for a few minutes then add the tomatoes and water.

Add the vegetables and sausages. Bring to a low boil on a low heat. Add more water if necessary. Put lid on pot and cook for about 45 minutes or until vegetables are tender. Making sure to stir occasionally to prevent sticking on the bottom
