Pavlova
Ingredients
4 Egg Whites
1 Teaspoon White Vinegar
1 cup Castor Sugar
1 Teaspoon Vanilla Essence
Beat egg whites in bowl for 2 minutes or until stiff add sugar 1/3 cup at a time and beat on high speed for 12-15 minutes. Add vanilla essence and vinegar, beat for one more minute.
Pour onto aluminum foil covered tray and fashion into a cake shape. Put into preheated (160C) oven, after one minute turn oven down to lowest setting (120C). Turn off oven after 50 – 60 minutes. Leave in oven till cool. Place on plate cut around top with knife and slightly depress.
When cool whip 400ml cream with one teaspoon vanilla essence pour onto top of pavlova. Add fruit of choice
