Sweet Potato Bake

1kg Sweet Potato cut into large slices

½ cup olive oil

50gm melted butter

1 Teaspoon salt

1 Teaspoon pepper

1 Teaspoon Paprika

1 Teaspoon Cumin

1 Teaspoon Cayenne Pepper

3 cloves garlic crushed

700gms grated cheddar cheese for topping

Mix all ingredients, except cheese, place in baking pan, cover with foil and bake for about 1 hour on 200C. Remove from oven sprinkle cheese on top put back into oven for about 10 mins or until cheese melted and browned.
