Walnut Fruit Cake
300gm cups plain flour
1 teaspoon baking powder
Pinch salt
250gm walnut pieces chopped
200gms glaze cherries
350gm sultanas
250gm butter
¾ cup castor sugar
1 Dessertspoon golden syrup
4 eggs
Sift the flour, baking powder and salt. Chop walnuts, cherries and sultanas and mix together. Cream butter and castor sugar until light about 5min. Beat in golden syrup and then eggs one at a time, beating well. Add flour and mixed fruit and walnuts alternately. Spoon into 20cm lined pan and bake in a moderate slow oven 150C for 1.5 hours.
