Eggplant Crumbed Slice
3 cups breadcrumbs/panko
2 teaspoon cumin
1 teaspoon chilli flakes/cayenne pepper
salt & pepper to taste
2 eggs beaten
flour for dusting
1 large eggplant
Olive oil for frying
Mix Breadcrumbs, cumin, chilli flakes, salt & pepper. Beat eggs. Slice eggplant into 1cm slices. Dust with flour dip in egg then breadcrumbs. Cook in oil for about 3 to 4 mins per side
