Creamed Rice

Ingredients

1 cup of water

dash of salt

1 cup long grain rice

1 ¼ litres milk

¾ cup sugar

2 eggs

1 teaspoon vanilla

powdered cinnamon

2 teaspoon cornflour (optional)

Bring water to boil in small covered saucepan, then add salt and rice. Lower heat and cook rice until water is absorbed by rice. Remove from heat still covered.

Scald milk. Add parboiled rice and stir. Lower heat and simmer until rice is very soft and tender (about 35 minutes) stirring often to make sure rice does not stick. When rice has cooked slowly add sugar mixing gently so that the sugar will dissolve completely. Remove from heat and stir. Allow to cool.

Beat eggs well and stir into rice mixture and place over low heat. Stir continually until pudding becomes golden and creamy (about 15 minutes). Add vanilla, stir and remove from heat. Pour pudding into serving dishes and sprinkle lightly with cinnamon.
